Description: This classic American cooked fruit dessert that is topped with pie dough gets its name from it being “dowdied” up. Halfway through baking, the dough is cut into pieces and pressed into the bubbling fruit juices for a rich and delicious dessert. MIXED FRUIT PANDOWDY SERVES 6 TO 8 2 apples, such as Golden Delicious or Granny Smith, peeled and sliced 1/2-inch thick 2 pears, such as Anjou, peeled and sliced 1/2-inch thick 4 nectarines or peaches, pitted and sliced 1/2-inch thick 2 plums, pitted and sliced 1/2-inch thick 1 cup strawberries, rinsed and patted dry, hulled and quartered 1/2 cup blackberries, rinsed and patted dry 1 tablespoon orange liqueur, such as Grand Marnier (optional) 2 teaspoons fresh lemon juice 2 teaspoons cornstarch 1/2 cup plus 1 tablespoon granulated sugar 1/4 teaspoon ground cloves 1/8 teaspoon ground nutmeg Pinch of salt Pinch of freshly ground pepper 1 tablespoon unsalted butter, cut into small pieces, plus ½ tablespoon Basic Sweet Pie Crust (recipe follows) 1 1/2 cups plus 1 tablespoon heavy cream 2 tablespoons confectioners' sugar, plus more for garnish Vanilla ice cream, for serving (optional) Mint sprigs, for garnish (optional) Preheat the oven to 400 degrees F. In a large bowl, combine apples, pears, nectarines, plums, strawberries, and blackberries. Add lemon juice and cornstarch and toss gently to combine. Add 1/2 cup sugar or maple syrup, ground cloves, ground nutmeg, and salt, and stir well. Butter a 9-inch deep-dish pie plate with 1/2 tablespoon butter. Transfer the fruit mixture to the buttered dish and dot fruit mixture with the remaining tablespoon butter. On a lightly floured surface, roll out the pie crust, about 1/8-inch thick and place on top of the fruit mixture. Tuck the edges under flush with the edges of the dish and brush pastry with 1 tablespoon heavy cream. Sprinkle with remaining tablespoon of sugar. Using the tip of a sharp knife, cut several steam vents in the top of the pastry. Transfer pandowdy to the oven and bake, uncovered, until the pastry is lightly golden, about 30 minutes. Remove the pandowdy from the oven and reduce the oven temperature to 350 degrees F. Use the edge of a metal spatula to cut the crust into 1-inch squares, then press the crust down into the filling. Return the pandowdy to the oven and bake until golden brown, about 30 minutes longer. Let cool 15 to 20 minutes before serving. Just before serving, whip the remaining 1 1/2 cups of heavy cream to soft peaks in a large bowl with the confectioners' sugar. Serve the pandowdy warm in a shallow bowl, with a dollop of the whipped cream or vanilla ice cream, and a sprig of mint, if desired. BASIC SWEET PIE CRUST MAKES ENOUGH FOR ONE-9-INCH SINGLE CRUST PIE 8 ounces all-purpose flour (about 1 ½ cups, plus 2 tablespoons) 1 tablespoon granulated sugar ½ teaspoon salt ½ cup (1 stick) unsalted butter, cut into ¼-inch pieces, chilled 2 tablespoons solid vegetable shortening 3 tablespoons ice water In a large bowl, whisk together the flour, sugar and salt. Using your fingertips, quickly work in the butter and shortening until the mixture resembles coarse crumbs. Add 2 tablespoons ice water and work in with your fingers until the water is incorporated and the dough comes together. Add more water, as needed, to make a smooth dough, being careful not to overmix. Form the dough into a disk, wrap tightly in plastic wrap, and refrigerate for at least 30 minutes and up to 1 day before using.
